(4 Ingredient) Lemon Poppy Seed Pancakes

Ingredients
- 2 eggs
- 1 banana
- 1 heaping tsp poppy seeds
- zest of 1 small lemon
- optional, 1 tbl of coconut flour (This helps thicken the batter and will give you fluffier pancakes. If you have trouble cooking Banana-Egg pancakes this will help. The ones pictured above do not use this).
- optional, blueberries
Instructions
- Mash the banana in a bowl.
- Add the eggs, poppy seeds, lemon zest, and flour (optional). Mix well with a whisk.
- Grease the pan with coconut oil or ghee and cook on the stove just like normal pancakes. I cook mine over medium-low heat.
- Optional: Top with blueberries.

I have this pancake flipper from Amazon. It it the sole reason I am able to flip my Banana-Egg Pancakes and have them resemble actual pancakes!
