(4 Ingredient) Lemon Poppy Seed Pancakes

Ingredients
  • 2 eggs
  • 1 banana
  • 1 heaping tsp poppy seeds
  • zest of 1 small lemon
  • optional, 1 tbl of coconut flour (This helps thicken the batter and will give you fluffier pancakes. If you have trouble cooking Banana-Egg pancakes this will help. The ones pictured above do not use this).
  • optional, blueberries
Instructions
  1. Mash the banana in a bowl.
  2. Add the eggs, poppy seeds, lemon zest, and flour (optional). Mix well with a whisk.
  3. Grease the pan with coconut oil or ghee and cook on the stove just like normal pancakes. I cook mine over medium-low heat.
  4. Optional: Top with blueberries.
Notes
I have this pancake flipper from Amazon. It it the sole reason I am able to flip my Banana-Egg Pancakes and have them resemble actual pancakes!

I love these topped with Blueberry-Blackberry Chia Jam.
