This is my favorite way to prepare fish when I am in the mood for something a little different. If you have kids (or anyone) who is not crazy about fish this is a great recipe for them! For an even more kid-friendly version the fish can easily be turned into little fish sticks.
Crusted Fish

Ingredients
- 1 lb fish of choice
- 1 egg or a few egg whites
- ½ cup finely ground almonds or cashews*
- 1 tbsp of this Spicy Seasoning - for kids or people who do not like spicy just omit the cayenne from the seasoning

Instructions
- Preheat the oven to 430F.
- Line a baking sheet with parchment paper. On top of the parchment paper place a wire rack and spray with oil. This gets the fish crispy on both sides without having to flip it in the oven.
- Cut the fish into two serving size fillets or small pieces for fish fingers.
- Put the egg in one bowl and lightly beat it. Set aside.
- In a separate bowl, mix the almond flour, ground flax, seasoning, and parsley (optional). Spread out on a large plate.
- Dip the fish in to the egg and then coat it with the flour mix. Place on rack.
- Bake for 15 minutes. Then, broil (on low) for about 3 minutes to brown the top and get it crispier. WATCH CAREFULLY - this burns easily under the broiler.
Notes
This also tastes great with Cumin Seasoning or Pepper Crust Seasoning.
*I grind the nuts in my food processor. I find the fish gets much crispier using this method compared to almond meal or cashew meal, but it works with both.
