Jícama is a remarkably healthy and (in my opinion) under eaten vegetable! Jícama is a (basically) flavorless root vegetable with a wonderful texture. It is low in calories, high in fiber, and has a very low glycemic index. The fiber in jícama is filled with oligofructose inulin, which increases the absorption of calcium from other foods, helps maintain healthy bones, & promotes a healthy gut. - 1 Jícama
- 1 lime, juiced
- a small pinch of sea salt, optional
- Peel and slice the Jícama.
- Drizzle with lime juice and sea salt (optional).
