Mediterranean Vegetables

Ingredients
  • 2 tbl coconut oil
  • 3 cloves of garlic, minced
  • 1 medium red onion, chopped
  • 1 medium bell pepper, sliced
  • 1 medium zucchini, chopped
  • 1 medium squash, chopped
  • 5 or 6 artichoke hearts, sliced
  • 2-3 tomatoes, chopped
  • about ¼ cup Kalamata olives, chopped
  • about ¼ cup green olives stuffed with minced pimiento, chopped
  • sea salt and fresh pepper, to taste
  • a generous sprinkling of fresh or dried basil
  • a generous sprinkling of fresh or dried oregano
  • 1 tbsp capers, optional
  • tomato sauce, optional, to taste
Instructions
  1. Cook the coconut oil, garlic, red onion, and pepper in a large sauté pan over medium heat for about 5 minutes.
  2. Add the zucchini, squash, and artichoke hearts and cook for about 5 more minutes.
  3. Add the rest of the ingredients and continue to cook for about 2-3 more minutes. Optional: add a few big spoonfuls of tomato sauce.
