Mediterranean Vegetables

Ingredients
- 2 tbl coconut oil
- 3 cloves of garlic, minced
- 1 medium red onion, chopped
- 1 medium bell pepper, sliced
- 1 medium zucchini, chopped
- 1 medium squash, chopped
- 5 or 6 artichoke hearts, sliced
- 2-3 tomatoes, chopped
- about ¼ cup Kalamata olives, chopped
- about ¼ cup green olives stuffed with minced pimiento, chopped
- sea salt and fresh pepper, to taste
- a generous sprinkling of fresh or dried basil
- a generous sprinkling of fresh or dried oregano
- 1 tbsp capers, optional
- tomato sauce, optional, to taste
Instructions
- Cook the coconut oil, garlic, red onion, and pepper in a large sauté pan over medium heat for about 5 minutes.
- Add the zucchini, squash, and artichoke hearts and cook for about 5 more minutes.
- Add the rest of the ingredients and continue to cook for about 2-3 more minutes. Optional: add a few big spoonfuls of tomato sauce.
