Mushroom Cauliflower "Mashed Potatoes"

Ingredients
- 1 medium head cauliflower
- ½ lb mushrooms, chopped
- 2-3 tbl ghee, divided
- 6 cloves of garlic, minced
- a generous sprinkling of onion powder
- ½ small lemon, juiced
- 1 heaping tsp dried parsley or 1 heaping tbsp fresh parsley
- sea salt, to taste
- fresh pepper, to taste
Instructions
- Steam the cauliflower florets until soft.
- Place the steamed florets in a food processor and blend until smooth. They should look and have a texture similar to mashed potatoes.
- Heat 2 tbl of ghee and garlic in a large skillet. Cook over medium heat for a minute or two.
- Add the chopped mushrooms, onion powder, salt, and pepper. Cook over medium heat for 5-10 minutes, until the mushrooms are soft.
- Add the parsley, lemon juice, 1 more tbl of ghee (optional) and cauliflower. Mix together and heat for a minute or two over low heat.
- Taste and add more seasoning as needed.
