Paleo (No Bean) Hummus

Ingredients
  • 2 medium zucchinis
  • 3 tbsp fresh lemon juice
  • 2 tbsp tahini (or almond butter)
  • 2 tbsp extra-virgin olive oil
  • 2 heaping tsp Spicy Cumin Seasoning or 2 tsp cumin - I highly recommend the seasoning. It takes the hummus to a whole new level!
  • ½ tsp sea salt
  • 3-4 cloves of garlic
  • You can add any other flavors you like: roasted red pepper, sun-dried tomato, basil, coriander...
Instructions
  1. Mix all ingredients in a food processor until well combined. You will need to scrape down the sides a few times.
  2. Tase and add more seasoning as necessary.
  3. Store in the refrigerator. It may seem a bit thin at first, but it will thicken in the fridge.
