White Fish with an Olive Caper Parsley Sauce

Ingredients
- 2 fish (of your choice) fillets
- 2-3 tbl coconut oil or ghee
- 1 heaping tbsp fresh parsley
- 1 tbsp capers
- 8 green olives stuffed with pimento
- garlic powder or fresh garlic, minced
- onion powder
- sea salt
- lemon wedge

Instructions
- Preheat oven to 425F.
- Place the fish on a piece of parchment and generously sprinkle with garlic powder, onion powder and sea salt. If using fresh garlic just add it to the mixer in the next step.
- Mix the ghee (or coconut oil), parsley, capers and olives in a blender or food processor. I have a great mini food processor that I use.
- Spoon the sauce over the fish.
- Bake for about 12 minutes, more or less depending on the thickness of the fish.
