White Fish with an Olive Caper Parsley Sauce

Ingredients
  • 2 fish (of your choice) fillets
  • 2-3 tbl coconut oil or ghee
  • 1 heaping tbsp fresh parsley
  • 1 tbsp capers
  • 8 green olives stuffed with pimento
  • garlic powder or fresh garlic, minced
  • onion powder
  • sea salt
  • lemon wedge
  • pictured above with a Caesar Salad
Instructions
  1. Preheat oven to 425F.
  2. Place the fish on a piece of parchment and generously sprinkle with garlic powder, onion powder and sea salt. If using fresh garlic just add it to the mixer in the next step.
  3. Mix the ghee (or coconut oil), parsley, capers and olives in a blender or food processor. I have a great mini food processor that I use.
  4. Spoon the sauce over the fish.
  5. Bake for about 12 minutes, more or less depending on the thickness of the fish.
