Ingredients
  • fresh oysters
  • optional, lemon wedges
  • optional, cocktail sauce
  • optional, mignonette sauce
Instructions
  1. To store the Oysters: When you get the oysters home from the store, rinse each one off in the sink to remove any dirt from the shells. Place them on a large plate (in a single layer) on a cool, damp towel. Then cover with a cool, damp paper towel. Place in the fridge. They should be eaten within 2 days, but the sooner the better!
  2. To Prepare: Hold the oyster wrapped in a towel and use your oyster knife to open it. They can be a bit tricky to open. Just google "How to Shuck Oysters" for some good instructional videos.
  3. Serve over ice.
Notes
I highly recommend purchasing an Oyster Knife to open them. I got this one from Amazon.

FYI It is not uncommon to find small (living!) crabs inside an oyster. Don’t let it frighten you! I was completely unaware of this until I opened my very first oyster at home and we got one! Some say it is good luck.
