Bruschetta is a pre-paleo favorite of mine and the paleofied version is just as tasty! A go-to recipe whenever I entertain.
Best part is this is very easy to make!
Paleo Bruschetta
Author: Apples to Zoodles
Serves: 6-8 Pieces
Ingredients
- 3 medium tomatoes, coarsely chopped, seeds removed
- 1 tbsp fresh basil, chopped
- 1 heaping tsp minced garlic
- a pinch of sea salt
- a generous drizzle of extra virgin olive oil
- Focaccia
Instructions
- Mix all ingredients in a bowl.
- Spoon onto the focaccia. I like to toast the focaccia.

Also tastes great with a layer of Artichoke Pesto on the Focaccia.
