Paleo Sushi Rolls

sushi4 I never made sushi at home until I started eating paleo and now it’s a new tradition in our home. I cannot believe how easy and fun it is!

Paleo Sushi Rolls

Ingredients
  • Nori Sheets
  • Cauliflower Rice
  • California Roll
  • Crab
  • Cucumber
  • Avocado
  • Veggie Roll (vegan)
  • Cucumber
  • Avocado
  • Carrot
  • Asparagus
  • Wasabi, optional
  • Pickled Ginger, optional
  • Coconut Aminos, optional
Instructions
  1. Prepare all the veggies. For all of mine I used 1 cucumber, ¾ pound crab, 1 avocado, 2 carrots and 1 bunch asparagus. I had a lot of leftover veggies for the juicer the next day!
  2. Cucumber: Cut in half and get rid of the seeds. Then slice thinly or use a Julienne Peeler.
  3. Avocado: Slice.
  4. Carrots: I peeled them and then used a Julienne Peeler.
  5. Asparagus: Cut off the bottom half to ¾.
  6. Steam the carrots and asparagus for 2-5 minutes.
  7. Place a nori sheet on the rolling mat. Wet the whole thing with a damp paper towel. Do a layer of rice, followed by whatever you would like to put in the roll! Then roll it. It is hard to explain the proper rolling technique - I recommend googling it and watching a video.
  8. Place the roll on a cutting board. With a very sharp knife slice the roll.

You will also need a sushi rolling mat. I bought mine from Amazon.
