Parsnip Rice

Parsnip Rice TEXT Cauliflower rice is a wonderful side dish, but from time to time I get really sick of it. When I am not in the mood for cauli rice, parsnip rice is the perfect alternative! It has a fairly neutral flavor and basically just tastes like whatever you season it with.

Parsnip Rice

Ingredients
  • 5 medium parsnips
  • 2 tbsp coconut oil or ghee
  • 3 cloves of garlic, minced or a generous sprinkling of garlic powder/granules
  • a sprinkling of onion powder
  • sea salt, to taste (about ⅛ tsp)
  • fresh pepper, to taste (about ⅛ tsp)
  • any other fresh or dried herbs you like, optional
Instructions
  1. Peel the parsnips and cut off the tops and bottoms.
  2. Coarsely chop the parsnips and then pulse in the food processor (with the "S" blade) until it looks like rice. OR you can shred the parsnips using the shredding blade and then switch to the "S" blade and pulse a few times until it looks like rice.
  3. In a large pan, over medium heat, sauté the garlic in coconut oil (or ghee) for about 1 minute.
  4. Add the rest of the ingredients, cover, and cook over medium-low heat for about 8 minutes, or until the parsnips are soft and just starting to brown.
  5. Taste and add more seasoning as necessary.
