Plantain Chips

plantain Plantain chips are the perfect snack or party dish! All the ones I find in the stores are very good, but unfortunately I have yet to find a brand that does not use vegetable oil or canola oil. The good news is…they are so easy to make yourself and taste even better!

Ingredients
  • 1 plantain
  • a generous sprinkling of garlic powder
  • a generous sprinkling of onion powder
  • sea salt, to taste
  • fresh pepper, to taste
  • a generous sprinkling of chili powder
  • 1 tbsp coconut or avocado oil
  • lime juice, optional
  • pictured with Pico de Gallo
Instructions
  1. Preheat oven to 400F.
  2. Line a baking sheet with parchment paper.
  3. Slice the plantain as thin as possible. I recommend using a Mandoline Slicer if you have one.
  4. Mix all ingredients together in a bowl and lay in a single layer on the baking sheet. OR lay the plantains on the baking sheet and sprinkle with garlic, onion, salt, pepper, chili powder, and oil. I use my Misto sprayer and spray the plantains with avocado oil.
  5. Bake for 20 minutes. Flip the chips halfway through.
  6. Remove from oven and let cool completely. Letting them cool gets them crispier.
  7. Optional: Drizzle with lime juice before serving.
Notes
These are best eaten right away. When stored overnight they tend to lose their crispiness. You can reheat them under the broiler, but mine never get quite as crispy.
