Spinach is probably my favorite vegetable – I just cannot get enough of it! After trying out many different recipes and variations, I realized the simpler the better.
Sautéed Spinach

Ingredients
- 6-ounce bag of spinach (Remember: it shrinks a ton after cooking)
- 1 to 1½ tbsp coconut oil
- sea salt and fresh pepper
Instructions
- Heat the oil in a large sauté pan for a minute.
- Add the spinach.
- Cook over medium heat for about 5 minutes, stirring occasionally so it cooks evenly. You know it's ready when all the spinach has wilted.
