Steamed Artichokes with Creamy Dijon Sauce

ARtichokes Steamed Artichokes were always a staple in my family growing up and they remain one of my favorites today. These are so easy to make and ridiculously nutritious.

Steamed Artichokes with Creamy Dijon Sauce

Ingredients
  • 3 artichokes (or however many you can fit in your steamer)
  • a generous sprinkling of garlic Powder
  • a generous sprinkling of onion Powder
  • a generous sprinkling of whole black pepper corns
  • juice of 1 lemon
  • Mustard Sauce:
  • Annie's organic dijon
  • stone ground mustard (check out the brand I use here)
  • mayonnaise, optional
  • for an amazingly delicious alternative sauce replace the mayo with raw honey
Instructions
  1. Fill your steamer pot with water to the appropriate level and generously add garlic powder, onion powder, whole black pepper corns and fresh lemon juice. Bring to a boil.
  2. Cut off about a ½" to 1" from the top of the artichoke.
  3. Trim the top ¼" of each leaf with a kitchen scissors.
  4. Cut off the stem on the bottom.
  5. Place the artichokes in a steamer basket, place in the pot, cover, and lower to simmer.
  6. Cook for about an hour, or until you can easily pull a leaf out.
  7. For the sauce: mix equal parts dijon, stone ground mustard, and mayo (optional).
Notes
If you have never trimmed an artichoke before just google it and there are plenty of great instructional videos.

If you do not like mustard the artichokes also taste great with melted ghee mixed with fresh lemon juice.
