Crab Cake Eggs Benedict

Ingredients
- 1 crab cake (I always keep these in my freezer - they freeze great!)
- 1 poached egg*
- spinach, sautéed in a little coconut oil or ghee
- 1 Plain Bagel or Everything Bagel, optional
- A slice of tomato, optional
- paprika, optional, sprinkled on top
- Old Bay seasoning, optional, sprinkled on top
- If you like Hollandaise try this Paleo version. [/i]
Instructions
- Just layer the ingredients and enjoy!
Notes
*I would offer tips on how to poach an egg, but I always fail miserably. I finally caved and bought an electric egg poacher - and it works great! I own this one.
