Scallops

Ingredients
- 1 lb scallops
- sea salt
- fresh pepper
- 1 tbl ghee
- parsley for garnish, optional
- pictured above over Cauliflower Rice with Mediterranean Vegetables
Instructions
- Season the scallops with salt and pepper.
- Heat 1 tbl of ghee in a pan large enough to fit all the scallops. Move the ghee around so the whole pan is coated.
- Place the scallops in the pan and cook for about 2 minutes.
- Flip and cook 2 minutes longer.
- Optional: place over a bed of cauliflower rice and garnish with a bit of fresh or dried parsley.
