Strawberry Rhubarb Chia Pudding

Ingredients
  • 1 serving of Basic Chia Pudding - I made mine with Strawberry Almond Milk
  • 3 stalks of rhubarb
  • ¼ cup pure maple syrup or raw honey
  • a splash of pure vanilla extract
  • ⅓ cup water
  • squeeze of lemon
  • about 5oz frozen or fresh strawberries
Instructions
  1. Trim and slice the rhubarb into thick pieces.
  2. In a small saucepan over medium high heat, bring the rhubarb, vanilla, syrup, and water to a boil.
  3. Lower heat and simmer for about 10 minutes or until the rhubarb is soft.
  4. Pour into a bowl and place in fridge.
  5. If you are using fresh strawberries just dice them. For frozen strawberries, let thaw and then dice.
  6. Once the pudding is ready and rhubarb has cooled completely, layer according to the picture in the glass of your choice!
